Palo Azul (Eysenhardtia polystachya), also called kidneywood, is a small flowering tree native to Mexico and the American Southwest. Its name — 'blue stick' — comes from a remarkable quirk: when the wood is steeped, the amber brew shimmers with a blue-violet fluorescence in the light. Long a fixture of northern Mexican folk tradition, the wood was simmered into an everyday tea passed down through generations. Light and woody with a clean, mildly sweet, earthy flavor.
